Stove top Cornbread

2 cups of cornbread mix (not just cornmeal – cornmeal mix)

Enough milk to get it to consistency you want (Buttermilk is better)

1 egg

A little bacon grease

Mix all ingredients together and put in an iron skillet.   Cook on medium heat until one side is done and then flip.  After flipping turn burner to very low and let other side cook.

Put a spoon of bacon grease in an iron skillet and let it melt.  Also take some of this and put in the cornbread mix.  The remainder  use to coat the skillet.  The grease needs to be melted and skillet hot before putting cornbread mix in to cook.
